Saffron is a plant from the family of lilies and is the most expensive spice in the world. From the middle of the leaves, a long stem emerges from this plant, which leads to one or three flowers. The flowers have 6 purple petals. The flowers have 3 stamens and a pistil leading to a three-branched red-orange stigma. The used part of this plant is the end of the cream and stigma of three branches, which is known as saffron and is fragrant and slightly bitter. Saffron is invigorating and pharmaceutical companies use it as an anti-depressant. Crocin and safranal in saffron have the same effect as antidepressants. Crocin is the compound that is responsible for the coloring of saffron. Picrocrocin has a bitter taste, which is mostly responsible for the taste of saffron. The aromatic smell of saffron is due to the presence of safranal.
